WHere is a home-style version of a cocktail from our latest drinks list. It's a large-volume prepared mix that's loaded full of flavours of a festive period, making it ideal for a holiday party. Reserve the remaining cordial you can use for morning drinks, sweets, or for more rounds of this cocktail.
The Bikini Cocktail
Yields 10 guests
For the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Drink (yields 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Place all the components into a pot, bring to a light boil, agitating to dissolve. Next, take off the heat allowing it to cool fully. Transfer into a sealable bottle, close it keeping it in the fridge, where it will keep for up to a month.
To make Premix: Combine every spirits and syrup in a sizeable container, leave to sit for an hour, then filter it preferably using a fine cloth, to ensure it's completely strained.
For serving: Measure 85ml of the premix into a stirring glass packed with ice, and stir gently for a minute to chill. Filter into an chilled martini glass or similar, garnish with a few cranberries and complete it by giving it a light spray of the essential oil over the drink.
